For a slow cooker recipe that will really stick in your mind thanks to its great taste and wonderful versatility, give this delicious tomato dish a go.
Tomatoes are full of different health benefits. They’re known to help improve eye sight, help stomach health, improve blood pressure and help prevent diabetes, protect the kidneys, reduce cholesterol levels and reduce inflammation to name a few benefits!
Tomatoes are packed with vitamins and minerals and are a particularly a great source of vitamin C. They also contain dietary fibre and protein too.
This slow cooked recipe uses a whole bulb of garlic cloves to help ramp up the flavour when the pair are roasted together with olive oil. Caster sugar, sea salt and thyme is also used in this recipe and brings out a delicious Mediterranean flavour that will transport you back to your summer holidays.
Serve this dish up as a side dish at your next dinner party alongside roasted or barbecued meat and your guests will be really impressed with your effort. What’s more, this dish serves six people, so it’s a great one to try if you’ve got a crowd of hungry mouths to feed.
HOW TO MAKE SLOW ROASTED TOMATOES
Method
- Heat the oven to 130C, gas ½. Divide the tomatoes and garlic cloves between 2 baking trays, drizzle over the olive oil, and sprinkle over the sugar, salt and thyme sprigs.
- Roast for 2 hours 30 minutes, then set aside to cool.

- 600g mixed small tomatoes, halved
- 1 bulb garlic, cloves separated
- 1½ tbsp olive oil
- 1 tbsp caster sugar
- 1 tsp sea salt
- a few thyme sprigs

Serve with buffalo mozzarella, crusty bread and a rocket salad, if you like
