Are you throwing a dinner party this month? When the weather is bright and beautiful in the summer it’s a great time to have friends over, but if it’s sunny you don’t want to be stuck in the kitchen cooking – which makes this no cook starter the perfect go to dish for a summer dinner party.
It’s quick to make, no fuss in terms of ingredients, but still feels really special. Serrano ham and black olives give this dish a real Mediterranean feel, while palm hearts are a really meaty vegetable that are a great source of potassium, vitamin C, folate, calcium and iron.
Whisking the oil, vinegar and mustard together makes a tasty but really simple dressing for this starter recipe, and leaving it to marinate for 30 minutes or so really helps to ramp up that flavour even more. Once your palm hearts are marinated it’s just a case of assembling the dish and serving it up to your guests.
This recipe makes enough of the starter to feed four, so it’s a great one for the whole family to enjoy.
HOW TO MAKE PALM HEARTS WITH SERRANO HAM, OLIVES AND VINAIGRETTE
Method
Whisk together the oil, vinegar, mustard and some seasoning. Put the palm hearts in a dish and spoon over the vinaigrette. Cover and leave to marinate for 30 minutes.
Halve the palm hearts; arrange between 4 plates. Spoon over the vinaigrette, place the ham on top and spoon the olives around with a grinding of black pepper.

- 2tbsp Dijon mustard
- 2 cans palm hearts, drained
- 4 large slices Serrano ham
- 3tbsp pitted black olives
