Need a week night dinner idea that is quick and easy and won’t break the bank? Casserole recipes are a great way to save money and this chicken in white wine sauce is a really tasty, cheap and quick dish you can enjoy at any time of year.
Everything is cooked in one pan, so it saves on washing up too! It just takes a few minutes to brown the onion and then chicken and then the rest of the ingredients and it’s left to simmer for a little while before it’s served up.
This recipe serves four, but it’s really easy to double if you’re feeding a crowd or want to batch cook something you can freeze for future meals.

HOW TO MAKE CHICKEN WITH WHITE WINE SAUCE
Method
Heat the oil in a large pan, add the onion and cook for 5 minutes or until softened. Add the chicken and cook until it's browned on all sides.
Stir in the mushrooms and wine and cook over a high heat for a further 3 minutes, or until the wine is reduced by half. Stir in the white sauce and simmer for about 15 minutes, or according to jar instructions, until the chicken is cooked.
Stir in the herbs and season with salt and pepper. You can serve this casserole with white rice flavoured with saffron.

- 125ml (4½fl oz) dry white wine
- 500g jar white sauce
