Chicken souvlaki is an easy and flavourful way to serve chicken. We've used a quick and easy herby marinade to make the chicken extra tasty. Try this quick recipe to give simple grilled chicken a flavour makeover. Once cooked, the chicken can be eaten hot or cold.

We think this delicious dish takes on even more flavour if cooked over a charcoal barbecue. Charring the edges of the meat ever so slightly gives a wonderful smokiness and you can't beat the texture of crisped edges and soft meat on the inside, it's a real winner.

Souvlaki is a traditional Greek way to serve chicken, as well as other meats and vegetables. The word souvlaki means 'skewer' and the dish consists of cubes of meat and vegetables grilled on a skewer, which are then often served with pitta bread and tzatziki and salad or potatoes. You can try making your own tzatziki, a herby yoghurt dip, but you can also find it pre-made in most supermarkets.

HOW TO MAKE CHICKEN SOUVLAKI

Method

  1. Mix together all the ingredients except the chicken until combined. Stir in the cubes of chicken, season well with salt and freshly ground pepper, and mix to coat the meat.
  2. Thread the chicken onto the skewers and grill until golden. Serve with the pitta breads, tzatziki and lemon wedges.

  • 4tbsp lemon juice, plus lemon wedges, to serve
  • 4tbsp olive oil
  • 1 garlic clove, crushed
  • 1tsp dried mustard
  • 1tsp paprika
  • 1tsp oregano
  • 500g chicken breast, cubed
  • pitta breads and tzatziki, to serve
