Method
Preheat oven to 180 C, 160 C fan, 350 F, gas 4. Butter a 1½ litre (2¾pt) shallow dish. Layer potatoes in the dish with onions, bay leaves, dots of butter and seasoning, finishing with potato. Cover with stock and dot with butter. Bake for 1½ hours, covered with foil. Remove foil and bake for 30 minutes or until golden brown.
