This retro starter idea is a great one to try for your next dinner party if you’re looking to really shake things up this week. Everyone loves a good fondue – with gooey Gruyeye and Emmental slathered on bread, what’s not to love? It’s warming, hearty and makes for a really indulgent starter. But we’ve taken things up a notch with this starter recipe by adding a boozy element too with a glass of kirsch and a healthy amount of dry white wine.
The fruity brandy combines really well with the cheese, and the wine also helps to bring out this flavour – making a cheesy, boozy dish that everyone will just love.
There’s nothing more exciting to get the party started and conversation then a good sharing starter and this fun recipe will really help to get everyone in the mood. It takes just 30 minutes to prepare and there’s enough fondue to serve up to 6 people, so it really is a winner all round.
HOW TO MAKE KIRSCH CHEESE FONDUE
Method
- In a large bowl, mix together the cheese and the cornflour.
- Rub the base of a pan with the garlic then discard. Add the wine to the pan and heat until simmering gently. The trick is to add the cheese gradually, stirring all the time – like making risotto. As it melts, add another handful of cheese. Once all the cheese has been incorporated and the mixture has thickened, stir in the kirsch.
- Serve the kirsch cheese fondue with crusty bread to dip.
Ingredients
- 400g Gruyere, grated
- 400g Emmental, grated
- 3tsp cornflour
- 1 garlic glove, halved
- 350ml dry white wine
- small glass kirsch
- bread, for dipping
