Mix the herbs, garlic, chillies, sugar, lime juice and fish sauce in a bowl; season well. Stir in the crab and spring onions. Fan the lettuce leaves around the centre of each serving plate, add the cucumber and spoon the crab on to the centre. Serve with lime wedges.
