Kate Middleton's refreshing heatwave salad is the new dish that every royal fan and health guru seems to be talking about. So here is how you can replicate this dish that's fit for royalty.


Kate Middleton, the Duchess of Cambridge enjoys a varied diet and can often be seen on overseas royal engagements tucking into unusual foods and foreign delicacies. However, there is one salad that she regularly enjoys in the summer that is perfect for those looking for something refreshing without spending a fortune. 

This easy crowdpleaser is a watermelon salad with feta and onion. An article from the Daily Mail claimed that the Duchess has loved watermelon salads since at least 2014, and often incorporated them into her summer diet.

This salad has become an internet obsession and many people have taken the time to try making this simple dish themselves. One popular internet chef, Alex’s Kitchen Story, took to social media to show fans how they too could replicate this dish.

Ingredients for Kate Middleton's watermelon salad

1 baby/ small watermelon
1 block feta
1/2 cucumber
1 avocado
2 tbsp apple cider vinegar
2 tbsp olive oil
1 lime
Large handful mint
Salt & Pepper

Method to make Kate Middleton's Watermelon salad

According to Chef Alex, this recipe just requires a lot of slicing and dicing and then dressing the chopped ingredients with a homemade simple salad dressing. 

"Slice watermelon in half, remove the skin then slice into bite-size pieces. Add to a bowl. Chop cucumber into quarters and add to the bowl. Chop the avocado into bite-size pieces and add to the bowl. Chop the feta into cubes and you know what to do, add it to the bowl. Roughly chop the mint and add this in too. Pour the vinegar, olive oil and squeeze lime juice. Season well and gently mix with a large spoon," says Alex.

This recipe should serve at least four people as a side salad. This recipe can also be tweaked so that it can serve more or fewer people depending on the size of your barbecue.

This recipe includes red onion which is one of the common foods the royal family is banned from eating as onion and garlic can often be associated with bad breath, which is not ideal at a royal engagement. But for the Duchess, this seems to be more of an everyday salad rather than one for a high-class event.
