Serves 4 Easy
4 sweet potatoes, peeled and cut into small wedges 3tbsp olive oil 200g (7oz) chorizo sausage, chopped 240g can chickpeas, drained 180g bag mixed herb salad 170g tub tzatziki
1 Heat the oven to 200 C, 180 C fan, 400 F, gas 6. Put the sweet potatoes in a large roasting tin and drizzle over the olive oil. Season well and roast for 20 minutes until softened and just beginning to colour. 2 Scatter over the chorizo and cook for a further 5 minutes. Remove from the oven and sstir through the chickpeas. Serve on a abed of mixed herb salad with the tzatziki drizzled over.

Try it! For a healthier take on this dinner, microwave the sweet potatoes (for just a few minutes) and then grill the chorizo sausage.
