Davina McCall has teamed up with Waitrose to deliver a virtual cooking class as part of the supermarket’s Feel Good Friday campaign.
As the days, hours and minutes continue to blur, you’re not alone if you’ve found that Friday has lost the sparkle it once had in your household.
It’s simply not as exciting as every day feels much the same.
However, in an effort to restore a Feel Good Friday feeling, Waitrose has launched a new campaign to help lift our spirits - and save us from another evening wondering can you reheat couscous.
To kick off the series Davina McCall has got on board to share a delicious one-pot recipe from her new cookbook Davina’s Smart Carbs.
The pre-recorded video features Davina cooking her recipe for a simple and healthy chicken curry, cup of tea in hand, and candidly opening up about how she's coping with lockdown.
For the recipe you will need:
1 tbsp vegetable or coconut oil

1 onion, finely sliced
2 garlic cloves, finely chopped
2 tbsp mild yellow curry powder
50g ground almonds
600g boneless, skinless chicken thighs or breasts, trimmed of fat and diced
300ml chicken stock
2 bay leaves
200g butternut squash, cut into large dice
100g green beans, topped
50ml Greek yoghurt
salt and black pepper
lime wedges and a few coriander leaves, to serve
Davina reveals that she has been planning all of her meals to keep her focussed during this strange time. In an interview with Waitrose Weekend she explains that like many of us she has good days and bad.
Davina admits, “Sometimes we’ll all be laughing over a meal, and I’ll think ‘Wow, this is lovely’, then on other days everybody’s having a meltdown.”

As well as cooking from scratch, Davina stresses that keeping to a routine is what has been keeping her mind on track and that also involves lots of lists.
She explains, “I write a list of things that I want to get done that day. As a nation we’re all slightly flailing around, and the way I combat chaos is order: order in my house, order in my head. Lists! I’m also working to a week/weekend schedule, so at the weekends I let myself have a lie-in and I don’t do any work at all.”
Alongside healthy eating with Davina, Waitrose have a curated Spotify playlist by Fearne Cotton to help relax and meditate.
John Lewis are working with Charlotte Tilbury skin care to hold a masterclass and luxury scent brand, Neom, will be doing live Q&A to share hints and tips on how to look after yourself during this time.
