Autumn's the season to start tucking into healthy shellfish. Oysters, mussels and scallops are full of flavour and need little adding to them to bring out their taste.

Saute scallops in a little butter and serve with chorizo or crispy bacon. Mussels love garlic, white wine and parsley for marinieres and oysters need no more than a squeeze of lemon, shallots in red wine vinegar or Tabasco sauce.
